Lion’s mane is the common name given to a group of mushrooms of the genus Hericium. Lion’s mane mushrooms have a coral-like shape, with spindly branches that shoot out from the stem. They are creamy yellow in color, and are noted for their lobsterlike flavor and texture when cooked.
The three main varieties of lion’s mane mushrooms include comb tooth, conifer coral hericum, and comb hericum.
Fresh and dried lion’s mane mushrooms are available in specialty grocery stores. Not all types of Hericium mushrooms are edible, so buy mushrooms from a trustworthy source.
Lion’s mane mushrooms can be sautéed, broiled, grilled, or added to any recipe that requires mushrooms. These mushrooms are especially tasty when served over fish or combined with fresh vegetables.
