Fish and the wide assortment of shellfish we call seafood are animals that live exclusively in the water. Fin fish can live in fresh or salt water, and some can cycle from one environment to the other. The variety among edible fin fish is enormous. Their flavor ranges from mild to downright strong, while the texture varies from rich and meaty to lean and delicate. Shellfish include mollusks, which are soft-bodied animals such as clams and oysters that live in shells; hard-bodied crustaceans such as crabs and shrimp; and the tentacled cephalopods, including squid and octopus.
